Lunchbox Sausage Rolls

Instead of a “sanga”.

If you haven’t already guessed, I’m on a mission to create and freeze different items to include in my daughter’s school lunchbox. You see, she’s starting school in 10 days’ time and I’m starting to freak out. The only thing I’m really excited about is packing her with a healthy lunch daily. I’m really not ready for her to leave the nest and head to big school (aka Kindergarten) for the first time. Miss 5yrs old is still my little one. I think she will always be. That’s what happens when you become a mum, isn’t it? In your eyes, your kids never grow up. They’ll always remain your babies no matter what.

Back to food. Miss 5yrs old has her favourite sandwiches but alas, one of them is with peanut butter. I’m erring on the side of caution and won’t give this to her for school lunches. I have no idea at this stage whether her school is nut-free or not. I’m assuming it is. That’s why I need other meals to give her. A sandwich every day can get a bit boring. So I’m planning on packing her with other things she can have other than the trusted “sanga”.

I believe in variety. Not only for school lunches, but also in recipes. I already have a delicious sausage roll recipe on here which is great for family dinners. What I wanted was a recipe that was packed with more goodness inside. There were loads of recipes out there for sausage rolls with lots of vegetables hidden inside. That’s great but I wasn’t sure on the overall taste. To me, taste is up there with overall goodness.

Then I found a recipe for pork & apple sausage rolls. I adapted this somewhat to simplify the ingredients to create this lunchbox sausage rolls recipe. Now, pork and apple go very well together so knew this would be a winner. I wasn’t disappointed. These lunchbox sausage rolls are light in flavour and are totally scrummy. Kids loved them and ate a few before I packed these away once cooled to freeze for later use.

NOTE: “sanga” is Australian slang for sandwich.

Pork & Apple Sausage Rolls

The added apple makes these sausage rolls light in flavour. They will be a winner if you pack these in school lunches. These Pork & Apple Sausage Rolls will freeze well. Just pop into the lunchbox frozen and it will be ready to eat at lunchtime.

Servings 24 pieces

Ingredients
 

  • 1 medium carrot, peeled and chopped into pieces
  • 1 apple, core removed and quartered with skin on
  • 4 cloves garlic
  • 1/2 brown onion, quartered
  • 500 g pure pork sausage mince
  • 2 sheets puff pastry, cut in half
  • sesame seeds
  • olive oil cooking spray

Instructions
 

  • Into a food processor, add carrot, apple, garlic and onion. Process until carrot, onion and apple are finely diced. Transfer into a mixing bowl.
  • Add aclso into mixing bowl parsley and sausage mince. Using your hand, squish the mixture to thoroughly mix together.
  • Divide the mince mixture into four.
  • Cut pastry sheets in half and spoon meat evenly along pastry sheet lengthways right up to the edge of the pastry. Roll lengthwise and continue to roll to seal the remaining edge.
  • Repeat on remaining pastry sheets.
  • Cut each roll into approx 6 pieces, or as desired.
  • Place on baking tray lined with baking paper and lightly spray with cooking spray and sprinkle with sesame seeds.
  • Bake in oven 220 degrees celsius (or 200 degrees fan-forced) for 20mins or until golden brown.
