Pork & Apple Sausage Rolls
The added apple makes these sausage rolls light in flavour. They will be a winner if you pack these in school lunches. These Pork & Apple Sausage Rolls will freeze well. Just pop into the lunchbox frozen and it will be ready to eat at lunchtime.

- 1 medium carrot, peeled and chopped into pieces
- 1 apple, core removed and quartered with skin on
- 4 cloves garlic
- 1/2 brown onion, quartered
- 500 g pure pork sausage mince
- 2 sheets puff pastry, cut in half
- sesame seeds
- olive oil cooking spray
Into a food processor, add carrot, apple, garlic and onion. Process until carrot, onion and apple are finely diced. Transfer into a mixing bowl.
Add aclso into mixing bowl parsley and sausage mince. Using your hand, squish the mixture to thoroughly mix together.
Divide the mince mixture into four.
Cut pastry sheets in half and spoon meat evenly along pastry sheet lengthways right up to the edge of the pastry. Roll lengthwise and continue to roll to seal the remaining edge.
Repeat on remaining pastry sheets.
Cut each roll into approx 6 pieces, or as desired.
Place on baking tray lined with baking paper and lightly spray with cooking spray and sprinkle with sesame seeds.
Bake in oven 220 degrees celsius (or 200 degrees fan-forced) for 20mins or until golden brown.
