I had to work on Saturday so left Daniel to go to the markets by himself. That meant I was leaving the week’s fruit and vegetable buying decisions to him. Scary stuff! It also meant I had no control over the random things bought. As expected, he turned up with a bunch of produce I had to get creative with.  After all, I hate seeing produce go to waste. The five… yes 5… cauliflower heads he had was an example of this.

I’m like most families where cauliflower is used in a couple of ways – mainly my favourite crumbed cauliflower but also the stock standard cauliflower cheese which is always a crowd pleaser. But these two ways were not going to use up the cauliflower as quickly as I had wanted.

There are a few people in my life who either choose gluten-free recipes as a lifestyle change, or are forced to go gluten-free because they’re coeliac. One of my close friends, Jo, often writes posts on Facebook about using cauliflower rice to make her pizza bases. So I was intrigued. Making cauliflower pizza bases was a way to help me go through the cauliflower heads quickly. I researched a few different cauliflower pizza base recipes using cauliflower and settled on this one that another good friend, Katie, posted on her Facebook page. After all, a personal recommendation when it comes to recipes goes a long way!

This cauliflower pizza base makes a great substitute if you’re not after a carb-heavy pizza meal. The great thing is that the kids will eat it – bonus! Just smother with your favourite sauce and tasty toppings and you’ll get them eating up every little morsel.

Cauliflower Pizza Base

A fabulous way to eat a normally carb heavy meal that is completely gluten free. A great alternative if you're wanting a more guilt free pizza for dinner.

Cook Time 25 minutes
Total Time 40 minutes
Servings 2 pizzas

Ingredients
 

  • 4 cups Cauliflower, grated
  • 2 cups Parmesan cheese
  • 2 Eggs, whisked
  • salt
  • Pepper

Instructions
 

  • Preheat oven to 180 degrees celsius.
  • Wash the cauliflower florets and shake as much water out as possible.
  • Put into a food processor and blend down to a course flour consistency. Alternatively grate them using a regular grater.
  • Put into a frying pan and cook over a medium to high heat to remove moisture. This is an important step as any moisture left could mean a soggy pizza base. Don't let the cauliflower colour. Set aside to cool.
  • Mix cauliflower with remaining ingredients.
  • Shape it into a crust and bake for 15-20 minutes.
  • Let cool for 10 minutes. Add on your favourite toppings then bake in the oven again for 10 minutes, or until the toppings are cooked and golden in colour.

Notes

  • Want to know what toppings I put on? The adult version in the photos had pizza sauce (tomato paste mixed with crushed garlic and oregano), thinly sliced zucchini, diced onion, jalapeno chillies, diced ham, raw prawns shelled, anchovy fillets, mozerella cheese.
