Cauliflower Pizza Base - a great gluten free alternative to a typically carb-heavy meal

Cauliflower Pizza Base

A fabulous way to eat a normally carb heavy meal that is completely gluten free. A great alternative if you're wanting a more guilt free pizza for dinner.

Servings 2 pizzas

Ingredients
 

  • 4 cups Cauliflower, grated
  • 2 cups Parmesan cheese
  • 2 Eggs, whisked
  • salt
  • Pepper

Instructions
 

  • Preheat oven to 180 degrees celsius.
  • Wash the cauliflower florets and shake as much water out as possible.
  • Put into a food processor and blend down to a course flour consistency. Alternatively grate them using a regular grater.
  • Put into a frying pan and cook over a medium to high heat to remove moisture. This is an important step as any moisture left could mean a soggy pizza base. Don't let the cauliflower colour. Set aside to cool.
  • Mix cauliflower with remaining ingredients.
  • Shape it into a crust and bake for 15-20 minutes.
  • Let cool for 10 minutes. Add on your favourite toppings then bake in the oven again for 10 minutes, or until the toppings are cooked and golden in colour.

Notes

  • Want to know what toppings I put on? The adult version in the photos had pizza sauce (tomato paste mixed with crushed garlic and oregano), thinly sliced zucchini, diced onion, jalapeno chillies, diced ham, raw prawns shelled, anchovy fillets, mozerella cheese.
