Hidden vegetables for the kids.
There are times as a mum you search and scour the Internet and all resources available to find quick yet healthy meals for the family. Ensuring the meal put together is laden with vegetable goodness is paramount. When the kids are young or are fussy, hiding veggies in a meal becomes an art form. You’ll be amazed at what they are hidden into! Let’s just say that cakes and brownies can include some interesting veggie ingredients. But here I’ve hidden zucchini in this truly delicious zucchini slice.
This zucchini slice is now one of my go-to recipes. I can whip it up for either a lunch or light dinner and know that everyone will enjoy it. I’ve even made this when we’ve had guests around for lunch so its well-received by many.
I was inspired by a mum friend on Facebook when she posted about the zucchini slice she makes for her family. She said her fussy kids devoured this with gusto. I needed to know what this amazing slice was! I was lucky that she passed on the recipe so I started making this myself. OK, my kids aren’t that fussy (thank goodness!) but if the zucchini slice was that good, then I had to make it myself.
What I love is that it doesn’t taste like it’s laden with vegetables. It has bacon in it which gives it a nice flavour to “mask” the healthy goodness that this slice has. That’s the magic ingredient! Try it. It’s simple and guaranteed you’ll have your kids (if not others also) smiling.

Zucchini Slice
Ingredients
- 3 Eggs
- 3/4 cup self-raising flour, sifted
- 225 g zucchini, grated
- 1 large onion, finely chopped
- 150 g rindless bacon, chopped
- 3/4 cup grated cheese
Instructions
- Preheat oven to 170°C. Grease and line a 30 x 20cm lamington pan.
- Beat the eggs in a large bowl until combined.
- Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.
- Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
Notes
- Serve this hot with crusty bread and a fresh green salad.
- If you don't have bacon, substitute it with chopped slices of ham.
