A meal so easy you’ll love it!
I can’t claim credit for this recipe. I was inspired by Catherine who was a former workawayer who stayed with us for 6 weeks in 2017. She introduced me to Tex Mex Chicken Wraps and I haven’t looked back since!
Catherine is from Texas in USA so she grew up with Tex Mex food. While staying with us she made a couple of meals. This was one of them.
So what is Tex Mex food?
According to Wikipedia Tex-Mex cuisine is a fusion of Mexican and American cuisines, deriving from the culinary creations of the Tejano people living in Texas. It’s the best of both worlds with bold flavours that will leave you licking your fingers afterwards.
Besides the flavour, let me tell you what I love the most about this Tex Mex chicken meal. If you’re time poor with a busy job and little time to whip up the family meal, this is the perfect dish for you to make. All you need is a slow cooker, four ingredients, and five minutes to prepare it in the morning. That’s all. It’s as easy as that! Throw all ingredients into the slow cooker and put it on to cook for 8 hours during the day. When you get home the chicken will be so tender it will shred easily to mix together with the sauce. If you want your Tex Mex Chicken to be more spicy, just use a spicy salsa. If however you and the kids prefer it more mild, opt for a mild salsa. That is honestly as complicated as it gets!
This meal is perfect in wraps. In my family, wraps are a big hit! The kids love to put together their dinner themselves. It may be a bit messy but they absolutely love to eat with their hands and see mummy & daddy do this too. If you love wraps, you have to give this meal a go.

Tex Mex Chicken Wraps
Ingredients
- 1 jar salsa, mild or hot
- 1 can black beans
- 1 can whole peeled tomatoes, chopped
- 2 chicken breasts
To serve
- 12 mini tortillas, warmed up
- sour cream
- cheese, grated
- jalapenos
Instructions
- In a slow cooker, add all ingredients. Using a spoon, give it a quick stir then put the lid on.
- Cook on low for 8 hours.
- Once cooked, turn off heat and shred chicken using two forks. Mix together with sauce.
To Serve
- Heat up tortillas as per instructions on the packet.
- In the middle of each tortilla, add the tex mex chicken, a teaspoon or two of sour cream, some cheese and jalapenos if you want to spice it up. Fold in half to eat and enjoy!
