Tex Mex Chicken Wraps
This is one of the simplest meals I know. Just four ingredients are all you need to make this for your next family meal. Slow cook during the day and serve in tortillas topped with cheese, sour cream and some jalapenos if you like it a bit more spicy.

- 1 jar salsa, mild or hot
- 1 can black beans
- 1 can whole peeled tomatoes, chopped
- 2 chicken breasts
To serve
- 12 mini tortillas, warmed up
- sour cream
- cheese, grated
- jalapenos
In a slow cooker, add all ingredients. Using a spoon, give it a quick stir then put the lid on.
Cook on low for 8 hours.
Once cooked, turn off heat and shred chicken using two forks. Mix together with sauce.
To Serve
Heat up tortillas as per instructions on the packet.
In the middle of each tortilla, add the tex mex chicken, a teaspoon or two of sour cream, some cheese and jalapenos if you want to spice it up. Fold in half to eat and enjoy!
