Great to make with the kids.

Biscuits, cookies… cookies, biscuits. They are the same thing, just different names in different countries. I love trying new recipes and this is one for quick & easy biscuits was given to me by a good friend.

I wanted a biscuit recipe that was quick and easy to make, one I can make with the kids and not have to worry about chilling time in the fridge. These cookies tick that box. They honestly don’t need time to firm up in the fridge. This makes them perfect when time is not on your side or the mood grabs you to make a quick batch. There is nothing worse than an impatient child. The pester and nagging power in my oldest child in particular is strong. If I tell her we are going to make biscuits, she wants to make them right that minute. By mixing the dough and then rolling to shape immediately meant I could keep my oldest happy. She got to play with the dough quickly without delay.

Granted, these are not the prettiest biscuits but what I love about this recipe, besides being quick to make, is that they aren’t too sweet. That’s why these easy biscuits will be a great addition to lunchboxes.

I made these with my two girls one wet afternoon. It was too miserable to go out so we stayed in and baked biscuits together. They both loved using different cookie cutters to cut out different shaped biscuits. Then came the teamwork. My two year old would lift the cut-out biscuit and give it to my four-year-old to place onto the baking tray. I was most impressed!

These cookies store well in a tight container. My two girls love to have one (or two) in the afternoon as a treat with a glass of milk. I can see that this recipe will be made frequently in this household!

Quick & Easy Biscuits

Who doesn't love a quick and easy recipe! This biscuit recipe doesn't require time to firm up in the fridge before rolling and cutting out.

Total Time 34 minutes
Servings 24 biscuits

Ingredients
 

  • 125 g butter, melted
  • ¾ cup caster sugar
  • 2 Eggs
  • cups plain flour
  • ½ teaspoon baking soda
  • 2 tablespoons baking cocoa

Instructions
 

  • Preheat oven to 200 degrees celsius.
  • In a large bowl, add melted butter, sugar, eggs and whisk until well combined.
  • Stir in flour, baking soda and baking cocoa until a soft dough forms.
  • Dust your kitchen bench with flour and roll out dough to approx 3-5mm thick.
  • Using cookie cutters, cut out biscuits and place them on baking trays lined with baking paper.
  • Bake for 7-8 minutes or until golden in colour.

Notes

  • The biscuits were spread onto two baking trays and each tray was cooked individually for 7-8 minutes each.
  • For a fun variation, swap out the baking cocoa with Hundreds and Thousands.
