My favourite carb-free work lunch!
Let me share with you a meal I often have made at work. It’s definitely one of my favourites – Prosciutto, Avocado & Pear Salad.
Where I work in Sydney there are many cafes and eateries. The choice is often mind-bogglingly difficult. Lots of options for heavy meals such as burgers, pasta and rice dishes which often isn’t what I’m after. There are plenty of salads available but these are often lack-lustre. Either they were made early in the morning so the ingredients are a little tired looking, or there are heaps of leafy greens and not much else.
Seriously, there are days I feel I can’t win! I’ll often wander around during my lunch break in search of what to eat. While the options are in abundance, most are over-priced… including the salads. I don’t know about you, but I can’t justify $13-15 for lunch every day. It’s not that I don’t earn a good salary as I do. I just want something nourishing and tasty yet doesn’t cost an arm and leg!
Within a short walking distance from my work are three supermarkets – Woolworths, Coles and Aldi. That’s pretty awesome for an inner-city suburb. What it does mean is that on days I want to eat something healthy, tasty and not too expensive, I can!
We have a large kitchen at work so I’m able to buy all the salad ingredients and whip something up for myself. Many colleagues would admire my lunch when I’ve gone to the effort to make it myself. Loaded with lots of fresh ingredients and flavours this salad definitely doesn’t disappoint. Eat this Proscuitto, Avocado & Pear Salad for either lunch or dinner when you’re after something carb-free.

Prosciutto, Avocado & Pear Salad
Ingredients
- 120g packet baby rocket salad mix
- 1 avocado, chopped into chunks
- 1 pear, chopped into chunks
- 1/2 red onion, sliced
- 1/4 cup toasted walnuts, lightly crushed
- Balsamic glaze
- 4 slices prosciutto, broken up into smaller pieces
Instructions
- On two plates, add first baby rocket then top with avocado, pear, red onion and prosciutto.
- Sprinkle the lightly crushed walnuts on top for added texture and crunch, then drizzle with balsamic glaze for the salad dressing.
Notes
- Balsamic glaze is balsamic vinegar reduced down until it is thick and slightly sweet.
- Aldi have a fig balsamic glaze that's available from the same area you would buy regular balsamic glaze - this flavour works exceptionally well with this salad.
- You can use a salad leaf mix of baby rocket and baby spinach if this is only available.
- If you have a nut allergy, substitute the walnuts for sunflower seeds or even pumpkin seeds so you still get that added texture and crunch.
