Creamy Garlic Mushroom Chicken

A one-pan delight.

I love chicken. It’s so incredibly versatile to cook. Plus it’s one of the most affordable meats you can purchase. That makes it perfect for family meals or if you have a large gathering. But if you can cook that in one pan with less mess… even better! Being a time-poor working mum, I needed a recipe I could quickly whip together. That’s how I discovered this creamy garlic mushroom chicken dish.

A late night in the office meant I didn’t get home until around 7.15pm. For those with kids, you’ll agree that’s late to be starting dinner. However, that’s the joys of being a working mum. I needed to find something quick to make with the ingredients I had on hand.

I was inspired by several recipes I saw online. I don’t like to follow recipes to the tee. I prefer to improvise. That’s for several reasons. One might be due to the ingredients I have or lack of. Another might be the tastes and preferences of the family. Another might be to cut corners to get the meal quicker onto the dinner table. But recipes give me the inspiration I need to get out of my comfort zone and mix things up.

Let’s talk about mushrooms

When I made this parmesan garlic mushroom chicken dish I was surprised at the family’s reaction. Before I get into that, I need to let you know that my hubby isn’t a big fan of mushrooms. In fact, neither am I. But it’s the texture that we both don’t like, not the flavour. What I normally do is just dice up the mushrooms into small pieces. That way we get the flavour without the texture we’re not fans of. If you love mushrooms, just chop them into slices instead.

Anyway, I was preparing myself for the worst… but they ALL loved it! Especially my hubby who gave this meal glowing praise. This creamy mushroom garlic chicken was a winner!

I must admit, the combination of the garlic and parmesan with the mushrooms is amazing. The flavour is just delicious. It’s creamy and full of flavour. If you decide to give this a go, I honestly think it will be one of the best sauces that you will ever make!

Creamy Garlic Mushroom Chicken

The sauce in this meal doesn't take long to make yet is sure to impress. Whip up this parmesan garlic mushroom chicken meal in just 30 minutes. Even better, it's made in one pan so less mess and clean up.

Ingredients
 

  • 4 boneless skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 200 g mushrooms, diced or sliced
  • 1/4 cup butter
  • 4 cloves garlic, crushed
  • 1 tablespoon flour
  • 1/2 cup liquid chicken stock
  • 1 cup cream
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon garlic powder
  • Pepper
  • salt
  • Pepper
  • salt

Instructions
 

  • In a large frying pan, add olive oil and cook the chicken on medium high heat for 3-5 minutes or until lightly brown and cooked through. Remove chicken and set aside on a plate.
  • Add the mushrooms and cook for a few minutes until cooked through. Remove from the pan.
  • To make the sauce, add the butter to the pan and melt. Add garlic and cook for 30 seconds then add flour and whisk together. Next whisk in the chicken broth, cream, parmesan cheese, garlic powder, and pepper and salt to taste. Simmer until sauce thickens.
  • Add the chicken and mushrooms back to the sauce and mix together. Serve with boiled potatoes or pasta.

Notes

With the mushrooms, you can either add them in diced or sliced depending on your preference. Both work well.
