Lots of noodles!
My two kids love noodles. Like, really really love noodles. They would be absolutely thrilled if they could have noodles every night for dinner. I don’t even bother asking them what they want for dinner anymore as know what the answer will be. It’s pretty predictable. I’m sure just about all kids love noodles. There is something fun about them as you slurp them into your mouth. That’s the part my two love the most. Often sends them into smiles and giggles as they do so. This recipe for easy chicken hoisin noodles won’t disappoint noodle slurping lovers.
As a mum, I occasionally resort to giving my children two-minute noodles (aka ramen noodles) for dinner. However, I don’t use the whole flavour sachet though. I find it’s too concentrated and full of sodium that she doesn’t need in her diet. I would only add a third of the flavour sachet and throw out the rest. But the mummy guilt sets in that I need to give my children better nutrition than what these noodles provide.
This is where easy chicken hoisin noodles come in. It upscales the noodles into a proper meal that even adults would love when time is at a pinch. Using vegetables that fussy eaters love ensures this meal is devoured. I have included baby corn, carrot, zucchini and bok choy. However, substitute the vegetables you have available and know will get eaten.
I used the noodles, just threw away the flavour sachet. The flavour in this dish comes from the hoisin sauce I used to create chicken hoisin noodles.

Easy Chicken Hoisin Noodles
Ingredients
- 1 packet of two minute noodles
- 250 g chicken breast, diced small
- ½ small zucchini, thinly sliced lengthwise into strips, then again in half
- 1 small carrot, julienned
- 6 baby corn, halved
- ½ small bok choy, washed and sliced lengthwise into strips
- 2 tablespoons hoisin sauce
- 1 tablespoon olive oil
Instructions
- In a large frying pan, heat oil on medium-high temperature and stir-fry chicken until cooked. Remove and set aside.
- Prepare the two minute (ramen) noodles according to manufacturers instructions without using the flavour sachets. Once cooked, drain noodles and add 1 tablespoon of hoisin sauce and mix through.
- Add zucchini, carrot, bok choy and baby corn into the frying pan with water. Stir-fry until tender. and water has evaporated.
- Add chicken and remaining 1 tablespoon hoisin sauce into frying pan with vegetables. Mix together.
- Serve in bowls with noodles topped with chicken and vegetables.
Notes
- You can easily substitute the vegetables in this dish with other ones you have readily available at home that the kids will eat - onion, beans, broccoli, broccolini, capsicum, cauliflower, spring onions, snow peas, or bean sprouts.
