Easy Chicken Fried Rice

Last weekend was busy for us. Saturday morning Daniel and I went to the Sydney Markets early then headed off to Australian Reptile Park near Gosford where we spent the rest of the day. The two kids and our current workawayer Tamara had a lot of fun with the koalas and kangaroos there.  Then on Sunday there was a cultural festival near home. I was exhausted by the end of Sunday. Like the dilemma faced by every mum around the world, I still needed to put dinner on the table. However, I just couldn’t be bothered cooking. Even though I love cooking, sometimes even I can’t face the stove and oven. Hence why I made this easy chicken fried rice recipe.

I bought a cooked BBQ chicken from the supermarket to take with us to the Reptile Park. In the end, this stayed home and I opted to take sliced ham instead for sandwiches. This meant I had a whole cooked chicken to use up. Faced with a few options, I decided to go with a meal that was the least hassle to make – Chicken Fried Rice. Using the cooked chicken in the dish made this a really simple meal to make with little fuss. Just what I needed after a busy day out at the cultural festival we attended.

The method I used to make chicken fried rice is not too dissimilar to how I make risotto where I sautee the rice first before adding in the stock to simmer away and cook until tender. I’ll admit though, this isn’t the authentic way to make Chinese fried rice. That didn’t matter in this instance as it is still full of flavour cooked through the rice.

This meal was a hit with the family not only for dinner that night, but for lunch the next day. It reheated really well and wasn’t at all too dry.

Easy Chicken Fried Rice

Like me I'm sure you occasionally end up with leftover cooked chicken that needs to be eaten. This is one way you can use it up that is really simple to make with little fuss. Just a few ingredients is all you need to make this a family favourite in your home too.

Total Time 35 minutes
Servings 4 people

Ingredients
 

  • 1/2 BBQ chicken, chopped into small chunks
  • 1 medium onion, diced
  • 1/2 cup peas, frozen
  • 1/2 cup corn kernels, frozen or fresh
  • 4 cups chicken stock
  • 2 spring onions, finely sliced
  • 2 Eggs, beaten
  • soy sauce

Notes

  • Save more fuss by using frozen vegetable medley of carrot, peas and corn.
  • Other vegetables can be used such as finely diced zucchini and finely chopped up broccoli. Just add in vegetables you know your family will eat.
  • This can be made into a vegetarian meal by omitting the cooked chicken and substituting the chicken stock for vegetable stock.
