Gluten-free & so easy to make!
Imagine a cookie recipe with no butter and no flour. That’s what these choc chip peanut butter cookies have… absolutely no butter and no flour. Are you wondering if this is at all possible?
Well, I definitely thought that when I saw this recipe.
These choc chip peanut butter cookies are honestly a miracle in disguise. They are a modern marvel of all baked goods. I knew I had to give it a go and try the recipe for myself. After all… was it too good to be true?!
I was about to find out!
100% Gluten-Free
Firstly, I have to confirm that these cookies are gluten-free. That’s because there is absolutely no flour. Actually, not even gluten-free flour is included. I love this. My niece is coeliac and I’m always keen to have a number of recipes up my sleeve for when she visits. Being a coeliac isn’t a fad where you just avoid gluten for personal choice. Over time, the immune reaction to eating gluten creates inflammation in coeliacs that damages their small intestine’s lining, leading to many medical complications. This is why they can’t eat even a trace of gluten in food. So the fact that these cookies are gluten-free is awesome. While I haven’t tried these cookies on her yet, my two kids gave them the big thumbs up.
With no added flour, these cookies are also great if you’re on a keto diet to reduce your carb intake.
100% Simple to Make
This then takes me to how simple these choc chip peanut butter cookies are to make. No sifting. No refrigerating. No creaming butter with sugar. Just measure everything into a bowl and mix. That’s literally it. I personally hate creaming butter with sugar as the process takes so long by hand and I’m always reluctant to drag out my mixer to do this. Why I love recipes like this as they’re genuinely foolproof.
So what do they taste like? The best way I can describe them is that they resemble a Reece’s Peanut Butter Cup in flavour. If you’re a fan of both peanut butter and chocolate, you’ll fall in love with these cookies.
