Baking in a rush.
I was in the middle of doing dinner when two kids asked if we could bake some cookies. They wanted to have one after dinner for dessert. I decided to oblige. After all, my youngest asked with her puppy dog look she’s renowned for and my oldest said the word “please”. How could I resist?! Dinner still needed to be completed. I could, however, fit in a batch of cake mix cookies. So quick to make when you’re pinched for time.
I keep one or two cake mixes in the cupboard. You just don’t know when you’ll need it. Yes I love baking and cooking from scratch. But, I’m a working mum with sometimes very little time to get meals onto the table. Shortcuts and baking hacks are welcomed so store-bought cake mixes really do come in handy. Even to make a batch of quick and easy cookies.
Making these cake mix cookies is definitely easy and super convenient. Plus they are really delicious and make a lovely soft cookie. I’ve also found that the kids can make this with minimal parental help. The mix is all the dry ingredients you’ll need. Just add eggs and melted butter. Then you can get creative with the inclusions. I used white and dark choc chips. Here are some ideas on what you can include:
- Chocolate Chips
- M&M’s
- Chopped chocolate bars (eg. Mars Bar)
- Sprinkles
- Peanut Butter
- Crushed or chopped nuts
In terms of the cake mix, I prefer vanilla or butter cake mix. Don’t let this stop you from experimenting with other flavours. You honestly can use whatever cake mix you prefer – chocolate, caramel, lemon, or even red velvet. You can try and flavour mix and inclusion combination to find which one is your family’s favourite.
Most cake mix cookie recipes online call for oil instead of butter. I just can’t fathom eating cookies with oil. If you don’t have butter on hand, you can most certainly use the same quantity of a mild flavoured oil such as canola or sunflower. However, I do believe butter is better.

Keep this recipe aside. You’ll be able to make these cookies and save your sanity at the same time. Hey, I’ve been there where I’ve been baking late into the night after getting home from work. It’s great to help out with baking for a cake stall, but you don’t need to lose sleep over it. You’ll still feel like a hero while able to find some time in the evening to relax a little.

Cake Mix Cookies
Ingredients
- 1 packet cake mix, approximately 470g
- 2 Eggs
- 60 ml butter, melted
- 1 cup chocolate chips
Instructions
- Preheat oven to 175°C. Line a baking sheet with baking paper and set aside.
- In a large bowl mix together the cake mix, eggs, and melted butter until smooth.
- Mix in desired add-ins until evenly incorporated.
- Using 2 tablespoons, scoop the dough onto the prepared cookie sheet about 5cm apart. Flatten each cookie slightly. Bake for 9-10 minutes, or until lightly golden at the edges.
- Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack to fully cool down.
Notes
- Cake mixes vary in weight. I find the store brand variants (eg. Coles, Woolworths or Aldi) to be around 350g in weight. This results in a very thin cookie. If you use one of these, add in 1/4 cup plain flour. Add this into step 2 above.
- Store in an airtight container for up 5 days.
