Cake Mix Cookies
Perfect cookies to make when you're short on time. Soft and delicious, these cake mix cookies certainly don't scrimp on taste!

- 1 packet cake mix, approximately 470g
- 2 Eggs
- 60 ml butter, melted
- 1 cup chocolate chips
Preheat oven to 175°C. Line a baking sheet with baking paper and set aside.
In a large bowl mix together the cake mix, eggs, and melted butter until smooth.
Mix in desired add-ins until evenly incorporated.
Using 2 tablespoons, scoop the dough onto the prepared cookie sheet about 5cm apart. Flatten each cookie slightly. Bake for 9-10 minutes, or until lightly golden at the edges.
Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack to fully cool down.
- Cake mixes vary in weight. I find the store brand variants (eg. Coles, Woolworths or Aldi) to be around 350g in weight. This results in a very thin cookie. If you use one of these, add in 1/4 cup plain flour. Add this into step 2 above.
- Store in an airtight container for up 5 days.
