Random act of kindness.
I love to travel. It goes well with my love of food. That’s why I joined a Facebook group dedicated to females. The group is inspirational and supportive. I love to see all the photos of amazing places people want to or have travelled to. Definitely get travel envy from that group.
It was about a year ago now (yes it took me that long to post this!) that one member posted in the group that her best friends cousin was in Sydney with his newlywed wife. While taking a sabbatical from work and life in general in USA, she was diagnosed with a brain tumour here in Australia and was undergoing surgery. This member made a random plea for someone in Sydney to take them some home cooked food. I put my hand up. Yes, I decided to take some of my home cooking to a random stranger to try and cheer him and his poor wife up. And you know what? It felt good to do something to help someone. It felt really good! We all should do more of this. It isn’t often we act so selflessly with strangers.
What I took to them was a Siciliana Pasta meal, some energy balls and these delicious mini muffins. I love making mini muffins. They are perfect little treats without overindulging. Mini muffins are also the perfect size for little ones. Especially when you want to slip it into lunchboxes.
So why are these muffins called ABC? The ABC stands for Apple Blueberry Carrot – the three core ingredients in these tasty morsels. Naturally sweetened with the apple and blueberries, these mini muffins don’t contain any added sugar. My youngest devoured two not long after I pulled them out of the oven so they definitely pass the kid test!

ABC Mini Muffins
Ingredients
- 2 Eggs
- 100 ml sunflower or canola oil
- 225 g self-raising flour
- 55 g porridge oats
- 2 carrots
- 2 apples
- 110 g blueberries
- 1 teaspoon cinnamon
- 1 teaspoon allspice
Instructions
- Grate the apple and carrot or use a food processor to finely grate them.
- Put all ingredients into a bowl, mix with a wooden spoon.
- Spoon into muffin tins or fairy cake cases Cook on 160 degrees celsius on fan bake, or 180 degrees celsius on normal bake for about 15 minutes, or until a toothpick inserted comes out clean.
