ABC Mini Muffins

Sometimes you want to pack a heap of goodness into something that isn't traditionally good for you. Made with apples, blueberries and carrots. These are sugar free, healthy and perfect for lunchboxes.

Ingredients
 

  • 2 Eggs
  • 100 ml sunflower or canola oil
  • 225 g self-raising flour
  • 55 g porridge oats
  • 2 carrots
  • 2 apples
  • 110 g blueberries
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice

Instructions
 

  • Grate the apple and carrot or use a food processor to finely grate them.
  • Put all ingredients into a bowl, mix with a wooden spoon.
  • Spoon into muffin tins or fairy cake cases Cook on 160 degrees celsius on fan bake, or 180 degrees celsius on normal bake for about 15 minutes, or until a toothpick inserted comes out clean.
