Spiced Apricot Bliss Balls
Made with cashews and walnuts, these spiced apricot bliss balls are satisfying for a healthy guilt-free snack the whole family will love. Keep these in the fridge and watch them disappear!

- 18 dried apricots
- 40 g walnuts
- 50 g cashews
- 2 tablespoons coconut oil
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 45 g desiccated coconut, plus extra to garnish
Place all ingredients in a small food processor and blend until well combined and a dough begins to form. If the mixture looks and feels a bit dry, add a little more coconut oil. The mixture should feel a little sticky.
Using your hands, roll approximately tablespoonfuls of the mixture into snack-sized balls. Place the balls in a container.
Add 2-3 tablespoons of extra desiccated coconut into the container and gently roll the balls to coat. Refrigerate for 30 minutes.
- Store these in an airtight container in the refrigerator for up to 5 days.
- You swap the walnuts for more cashews depending on what nuts you have available.
