Sauteed Kale - don't settle on salads alone to use this vegetable. Give this recipe a go - it's so simple and delicious!

Sauteed Kale

Most people wouldn't think about cooking kale but this recipe is a winner - it tastes great, is super simple to prepare and is a great alternative to your normal side vegetables.

Ingredients
 

  • 600 g kale, washed and leaves coursely chopped
  • 2 tablespoons olive oil, crushed
  • 1 onion, medium, roughly diced
  • 4 cloves garlic
  • 1/2 cup chicken stock, or water
  • salt
  • Pepper

Instructions
 

  • Heat olive oil in a large saucepan or wok over medium-high heat.
  • Add both garlic and onion and cook until soft but not coloured.
  • Add the stock and kale, toss to combine. Cover and cook for 5 minutes.
  • Remove cover and continue to cook, stirring until all the liquid has evaporated.
  • Season with salt and pepper to taste. Serve immediately.

Notes

  • You can substitute to chicken stock for vegetable stock, or just use water.
  • Depending on your taste preference, you can add either 2 tablespoons of red wine vinegar, 2 tablespoons of balsamic vinegar, or 1 tablespoon of freshly grated parmesan cheese to the cooked kale just before serving.
