Sauteed Kale
Most people wouldn't think about cooking kale but this recipe is a winner - it tastes great, is super simple to prepare and is a great alternative to your normal side vegetables.

- 600 g kale, washed and leaves coursely chopped
- 2 tablespoons olive oil, crushed
- 1 onion, medium, roughly diced
- 4 cloves garlic
- 1/2 cup chicken stock, or water
- salt
- Pepper
Heat olive oil in a large saucepan or wok over medium-high heat.
Add both garlic and onion and cook until soft but not coloured.
Add the stock and kale, toss to combine. Cover and cook for 5 minutes.
Remove cover and continue to cook, stirring until all the liquid has evaporated.
Season with salt and pepper to taste. Serve immediately.
- You can substitute to chicken stock for vegetable stock, or just use water.
- Depending on your taste preference, you can add either 2 tablespoons of red wine vinegar, 2 tablespoons of balsamic vinegar, or 1 tablespoon of freshly grated parmesan cheese to the cooked kale just before serving.
