Sausage Rolls
Just about everyone likes sausage rolls. I mean, what's not to like about them? You dip them in tomato sauce, they are like sausages but with pastry... decadent and delicious. Yes you can buy frozen ready made sausage rolls quite easily in supermarkets but have you truly looked at the ingredients?

- 6 (500g) pure pork sausages
- 1 onion, large, finely diced
- 4 cloves garlic, crushed
- 1 tablespoon parsley, dried or freshly chopped
- 2 sheets ready rolled puff pastry
Preheat oven to 180 degrees celsius.
Remove the skins from the sausages and put sausage meat into a bowl.
Add onion, garlic and parsley. Mix together.
Mould the sausage meat into one long roll (the length of a pastry sheet) and place at one end of the pastry sheet.
Roll the sheet up to tightly encase the sausage meat. Make sure both ends have enough meat.
Cut the sausage roll into four equal serving sizes and place onto a baking tray lined with baking paper.
Brush with a little milk or spray with cooking spray.
Bake for about 15-20 minutes in the centre oven rack or until pastry is golden brown.
- Add hidden vegetables in the sausage meat with either grated carrot, grated zucchini or finely chopped mushrooms.
- Add other herbs into the sausage meat such as a teaspoon of mixed herbs or oregano.
- When cutting the rolls into serving sizes, try wetting your knife first. This seems to cut the pastry without it dragging and pulling out of shape.
- Serve with a leafy green salad and a good dollop of tomato sauce. No additional carbs are required!
