Raspberry Bliss Balls

Raspberry bliss balls include both frozen raspberries and a little coconut oil. Healthy, gluten-free, nut-free and perfect for school lunchboxes.

Ingredients
 

  • 3/4 cup slightly thawed frozen raspberries
  • 1 cup rolled oats
  • 3/4 cup desiccated coconut
  • 1/4 cup coconut oil
  • 1 tablespoon sunflower seeds

Instructions
 

  • In a mini food processor, add raspberries, rolled oats, shredded coconut, coconut oil and sunflower seeds. Process until almost smooth and well combined.
  • Roll a tablespoon portion of the raspberry mixture into balls. Place on a lined tray in the fridge for 1 hour or until set.
  • Store in an airtight container in the fridge for up to 1 week.

Notes

  • If you want to extend the life of these bliss balls, freeze them in an airtight container and pull out what you need.
  • Try these with other frozen berries such as mixed berries, blueberries or even strawberries.
