Oat Pancakes - easy to make with a blender. Plus they have a really delicious flavour.

Oat Pancakes

Oat Pancakes are simple to make and are better for you with the added oats into the batter. Put everything into a blender to whizz it up. Means no lumps! The kids loved these and this recipe will be a family favourite from now on.

Ingredients
 

  • 1 cup plain flour
  • 1 cup rolled oats
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.5 cups milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons vegetable oil
  • 2 Eggs

Instructions
 

  • Place flour, oats, sugar, baking powder, baking soda, salt, milk, vanilla, oil and eggs in a food processor and puree until smooth.
  • Heat a lightly oiled frying pan over medium-high heat. Pour or scoop the batter onto frying pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Notes

Serve with fresh berries, compote, jam or your favourite syrup such as maple syrup, golden syrup or honey.
