Hasselback Potatoes - these are delicious, simple to make and look impressive when served!

Hasselback Potatoes

Ingredients
 

  • 12 small potatoes, washed and dried
  • 2 tablespoons olive oil
  • 1.5 tablespoons butter, melted
  • 4 cloves garlic, crushed
  • 1/2 teaspoon dried parsley
  • salt
  • freshly ground black pepper
  • 1/4 cup grated parmesan cheese, 20 grams
  • Garnish : finely chopped parsley, optional

Instructions
 

  • Preheat the oven to 200 degrees Celsius.
  • Place a wooden spoon on each side of the potato so that they are parallel to each other. Cut vertical slits about 3-5mm apart. The wooden spoons prevent you from cutting all the way through. If you choose to use baby potatoes, you can place chopsticks on either side of the potato instead.
    Hasselback Potatoes - depending on the size of the potatoes, use either wooden spoons or chopsticks as a guide when slicing these.
  • Arrange the potatoes on a baking sheet.
  • Combine the melted butter, oil, garlic and salt. Brush each potato with this mixture and bake initially for 30 minutes.
    Hasselback Potatoes - brush with a garlic butter mixture to add delicious flavour.
  • Take the potatoes out of the oven, brush them again with the mixture. Try and get some between the slices to put the flavour through the potato. Return to the oven for about another 25-30 minutes or until the potatoes are golden and the flesh is soft.
  • Remove from the oven and serve immediately.
