Cucumber Salad - a light salad accompaniment

Cucumber Salad

This is a salad my mum used to make regularly because dad always grew far too many cucumbers in the garden. It's a light salad to eat with a tangy flavour. Add or omit other vegetable ingredients to make this salad your own.

Ingredients
 

  • 4-5 medium cucumbers, grated
  • ⅓-½ cup white vinegar, adjust to taste
  • ½ cup water
  • 1-1½ tablespoons white sugar
  • ½ teaspoon salt
  • ¼ teaspoon Pepper, finely ground black pepper
  • 1-2 medium tomatoes, diced (optional)
  • ½ onion, diced (optional)
  • 1 small red capsicum, diced (optional)

Instructions
 

  • Into a medium sized bowl, add all ingredients and  mix together.
  • Taste and adjust to taste. You might need a little more sugar to cut through the acidity of the vinegar, or add a little more salt and pepper. Either way, make to your preference.

Notes

  • Include diced tomatoes, capsicum and onions to add more into this salad.  We often do this when we wanted a salad with a little more substance.
  • Use baby tomatoes cut into either halves or quarters as sweeter and more concentrated in flavour than larger tomatoes.
  • Use either white or red onions depending on what you have on hand and what you prefer to use in your salads.
