Cucumber Salad
This is a salad my mum used to make regularly because dad always grew far too many cucumbers in the garden. It's a light salad to eat with a tangy flavour. Add or omit other vegetable ingredients to make this salad your own.

- 4-5 medium cucumbers, grated
- ⅓-½ cup white vinegar, adjust to taste
- ½ cup water
- 1-1½ tablespoons white sugar
- ½ teaspoon salt
- ¼ teaspoon Pepper, finely ground black pepper
- 1-2 medium tomatoes, diced (optional)
- ½ onion, diced (optional)
- 1 small red capsicum, diced (optional)
Into a medium sized bowl, add all ingredients and mix together.
Taste and adjust to taste. You might need a little more sugar to cut through the acidity of the vinegar, or add a little more salt and pepper. Either way, make to your preference.
- Include diced tomatoes, capsicum and onions to add more into this salad. We often do this when we wanted a salad with a little more substance.
- Use baby tomatoes cut into either halves or quarters as sweeter and more concentrated in flavour than larger tomatoes.
- Use either white or red onions depending on what you have on hand and what you prefer to use in your salads.
