Cannellini Bean Dip
Cannellini bean dip uses simple ingredients to make this quick and tasty gluten-free dip that is perfect for when unexpected guests drop over for a visit. The main ingredient is a can of beans that is inexpensive and found in your local supermarket.

- 400 g cannellini beans, drained & rinsed
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons oilive oil
- 1 clove garlic, crushed
- salt & pepper, to taste
Place remaining beans, lemon zest, juice, oil and garlic in a food processor. Process until smooth and well combined. Season with salt and pepper to taste.
Transfer mixture to a serving bowl. Sprinkle with extra oil and freshly chopped parsley to serve.
Topping ideas to decorate your dip:
- a little finely chopped parsley
- a little paprika for colour
- reserve a tablespoonful of beans before blending them
- a tablespoonful of toasted pinenuts
