Spiced Cookies
This is a basic sugar cookie recipe which I amended to include a little cinnamon and nutmeg. These two flavours are traditionally used for Christmas cookies but I eased up on the amount of cinnamon used to ensure the flavour was lighter than what is used for the festive season. The best part of the recipe is it doesn’t require the dough to be chilled prior to use.
ANZAC Biscuits
ANZAC Biscuits are a family favourite to so many in Australia and New Zealand. Crunchy and delicious. This is a great recipe to make with children and include in their school lunchboxes as a treat.
Coconut Crisps
Coconut crisps are quick and easy to make. They are gluten-free plus are relatively low in sugar compared to other biscuit recipes out there. Perfect as a treat in school lunchboxes or after school with a glass of milk.
Pistachio & Cranberry Biscotti
I made these pistachio and cranberry biscotti to have with a cup of coffee or tea. I don’t know about you but I love to dunk biscotti into a hot drink so that it softens up a little. The saltiness of the pistachios, the sweetness of the cranberries – combined they are perfect together. Paired with a cup of coffee… heaven!
