A simple Italian soup.
Soup weather has finally hit Sydney and it’s starting to get really cold at night. We are after all now officially in winter as at 1st June. But up to now, the weather has been pretty mild. I found this stracciatella soup recipe online that I thought was worth trying. My family gave me the thumbs up so it’s worth sharing with you all. I am after all constantly seeking new and interesting meals to make.

Being stuck at home thanks to COVID-19 has meant I’ve devoted more time to this website. It has also meant more quality time with the family. OK, let’s be honest… when the kids were at home with us it was a pure nightmare. Having them do remote learning was not easy. Their motivation level was at an all-time low. Trying to juggle this while my husband did our jobs from home was exceedingly difficult. Tantrums and tears, particularly from miss 5-year-old. She just started school so learning to read and write was all new to her. Plus they got up to so much mischief all the time. For instance, we caught our girls one morning outside painting a couple of supermarket boxes. This in itself was harmless. But our upholstered outdoor chairs were covered in fluro pink paint. It was horrifying. It took three washes and lots of scrubbing to remove the paint. So yes… we drank a lot more alcohol to calm the nerves as a result of this.
Back then I was ready to stick both of our daughters on the side of the road with a “Free to a good home sign”. Unfortunately, how they were behaving I would doubt take them! Now that the kids are back at school and I’m able to get a lot more work done has meant a happier household all round.
There is nothing more warming than a delicious big bowl of soup for dinner. This stracciatella soup is an Italian version of egg drop soup. This is a really warming, comforting and totally yummy soup. I honestly can’t begin to explain how quick and easy it is to make. Perfect for winter weeknights when you’re really short on time. Use either homemade chicken stock, or a good quality store-bought liquid stock. Serve with crusty bread and a simple side salad such as rocket and parmesan if you want to maintain an Italian theme for your dinner meal.

Stracciatella Soup
Ingredients
- 1.5 litres chicken broth or stock
- 3 tablespoons semolina
- 3 large Eggs
- 3 tablespoon fresh parsley chopped
- 3 tablespoons Parmesan cheese
- 1/8 teaspoon cayenne pepper
- salt & freshly ground pepper to taste
Instructions
- In a medium-sized pot over medium-high heat, bring the chicken stock to a gentle boil. If the stock is unsalted, add 1/2 teaspoon of salt. Taste the broth and adjust salt and pepper. Do not boil the broth - just simmer.
- Whisk the eggs, parsley, semolina, grated parmesan and cayenne pepper together in a bowl until well blended together.
- While stirring the simmering broth, slowly pour egg mixture into the broth. Bring the broth back up to a simmer. The soup will be cloudy at first but it will clear as the broth heats up again.
- Add the baby spinach into the soup and mix to wilt. Ladle into bowls and serve.
