Dessert in only 5 minutes.
I’m sure I’m not the only parent who told their children to eat all their vegetables at dinner with the promise of dessert. I don’t have to do this often thank goodness. So being able to whip up a dessert in a mere 5 minutes is a true lifesaver when you have no dessert on hand. My kids are currently in love with peanut butter. So this peanut butter mug cake with choc chips was perfect for them.
Both my girls are great little eaters – devouring salads, brussels sprouts and broccoli to name a few. But sometimes they decide to be bloody difficult and just not eat many vegetables at all. The hard work to put dinner on the table to have them turn their noses at it is deflating. I’ve tried all the tricks I’ve learnt over the years from my own parents. Telling them little white lies such as eating carrots will make your eyes bright and shiny. Or, beans will make your hair grow long. Also, cauliflower will make your teeth white and strong. OK, that last one I invented but it works!
This cake is best eaten warm, while the chocolate is still melted and gooey. Because this cake is eggless, the crumb is a little loose. It actually resembles a soft cookie. I recommend you keep the cake inside the mug when you eat it. It won’t hold up if you try to remove it. So just grab a spoon and dig in.

Peanut Butter Mug Cake
Ingredients
- 4 tablespoons flour
- ¼ teasoon baking powder
- 1 tablespoon sugar
- ¼ cup milk
- 3 tablespoons peanut butter
- 2 tablespoons chocolate chips
Instructions
- In a microwave safe mug, add all ingredients except chocolate. Using a small whisk, mix vigorously until batter is smooth and no flour chunks remain.
- Stir 1 tablespoon of chocolate chips into the batter. Sprinkle remaining 1 tablespoon on top of the batter.
- Cook in the microwave at full power for about 1 minute. If cake batter is still gooey, cook for an additional 15 seconds. Allow cake to cool a few minutes before eating. Cake is best eaten warm.
Notes
- It is best to eat the cake directly from the mug and avoid removing it from the mug to eat it as the crumb is looser than a traditional cake.
- If you choose to omit the chocolate chips, you may need to add a little more sugar to the batter.
