ANZAC Biscuits are a family favourite to so many in Australia and New Zealand. Crunchy and delicious. This is a great recipe to make with children and include in their school lunchboxes as a treat.

Getting into the kitchen with the kids is a lot of fun. Yes, crazy and chaotic but seeing them get joy from measuring and mixing ingredients is precious. Even if you don’t have kids, baking is rewarding, nostalgic and can be quite therapeutic. Besides, baking makes your kitchen smell just so good that you are taken to a different world altogether. Below is a collection of baking recipes I have made and love.
Coconut Crisps
Coconut crisps are quick and easy to make. They are gluten-free plus are relatively low in sugar compared to other biscuit recipes out there. Perfect as a treat in school lunchboxes or after school with a glass of milk.
Plum Cake
My dad’s favourite cake and when you make it you’ll see why. It’s not intoxicatingly sweet and has a wonderful flavour from the yeast and lemon zest in the cake dough. This is a german cake by origin and is more like a slice than your typical traditional cakes. When you make it, I guarantee it won’t last long!
Banana Bread
This recipes proves that making banana bread isn’t hard or time consuming. No creaming butter or sifting flour… simply mix all ingredients together.

Boiled Milk Frosting
I don’t make traditional buttercream icing anymore if I can help it. Instead I make this frosting as the consistency is light and the flavour indescribably delicious. What I love about this the most is that this frosting isn’t sickly sweet like buttercream.
Pistachio & Cranberry Biscotti
I made these pistachio and cranberry biscotti to have with a cup of coffee or tea. I don’t know about you but I love to dunk biscotti into a hot drink so that it softens up a little. The saltiness of the pistachios, the sweetness of the cranberries – combined they are perfect together. Paired with a cup of coffee… heaven!
