Getting into the kitchen with the kids is a lot of fun. Yes, crazy and chaotic but seeing them get joy from measuring and mixing ingredients is precious. Even if you don’t have kids, baking is rewarding, nostalgic and can be quite therapeutic. Besides, baking makes your kitchen smell just so good that you are taken to a different world altogether. Below is a collection of baking recipes I have made and love.
Maine Blueberry Cake
Blueberries are in abundance currently and so cheap! Make the most of them by baking this delicious cake for dessert. Made with lemon zest and cinnamon, the aroma in your kitchen will have you counting the minutes until you can cut yourself a slice.
Spiced Cookies
This is a basic sugar cookie recipe which I amended to include a little cinnamon and nutmeg. These two flavours are traditionally used for Christmas cookies but I eased up on the amount of cinnamon used to ensure the flavour was lighter than what is used for the festive season. The best part of the recipe is it doesn’t require the dough to be chilled prior to use.
Sugar Free Mini Muffins
Inspired by a recipe Tamara made, I decided to amend it to be suitable for kids lunchboxes. Not only is this recipe super healthy, it doesn’t contain any added sugar (apart from the optional dusting of icing sugar I did once baked), and if you use gluten-free oats, this recipe is then gluten-free. Perfect!
Strawberry Cake
It’s super easy – everything gets mixed together, no creaming butter and sugar, and used fresh strawberries. Layer the cake with a strawberry cream mix and this cake will be perfect when served at your next afternoon tea.
Apple Cinnamon Chips
Use leftover apples to make this simple snack or as a lunchbox filler. This is a great homemade alternative to salty potato chips. Serving size is one cookie tray, or one apple.
Gluten-Free Chocolate Brownies
Just because you’re gluten free doesn’t mean you can’t enjoy wonderful tasty treats. This brownie is moist, chewey and gooey. Just perfect. Made with almond meal which gives a wonderful moist texture, better than if you use gluten free flour.
Pear & Chocolate Tart
A fabulous tart that is a sure winner. The chocolate at the bottom of the tart is a nice surprise when you slice it up and serve. It is actually a pretty quick and easy tart to put together.
