Chicken, Leek & Mushroom Risotto

This is definitely our family’s favourite meal of them all. I haven’t yet met someone who hasn’t liked this chicken, leek and mushroom risotto dish when they’ve had it. Don’t be put off by the fact this is a risotto recipe… it’s actually incredibly simple to make!

Pistachio & Cranberry Biscotti

I made these pistachio and cranberry biscotti to have with a cup of coffee or tea. I don’t know about you but I love to dunk biscotti into a hot drink so that it softens up a little. The saltiness of the pistachios, the sweetness of the cranberries – combined they are perfect together. Paired with a cup of coffee… heaven!

Banana Choc Chip Cake

Nearly everyone loves banana cake and with the added choc chips, this cake is sure to be a winner. I made this cake for a birthday cake but it is just as nice served for afternoon tea or as dessert after dinner.

Tomato Soup

Gnocchi make a wonderful change to pasta such as spaghetti and penne. It’s a fair amount of effort to make but not complicated if you’re an intermediate level cook. Definitely worth giving a go! Thanks to the ricotta, these are light and not stodgy like their potato cousins.

Tomato Puree

My mum stocked up our freezer with tomato purée when tomatoes were plentiful in the garden. She used this to make soups, pasta sauce and stews. The flavour is amazing when you make it yourself – fresher and more intense tasting compared to the purée or passata you buy in jars.
