Spiced Cookies

This is a basic sugar cookie recipe which I amended to include a little cinnamon and nutmeg. These two flavours are traditionally used for Christmas cookies but I eased up on the amount of cinnamon used to ensure the flavour was lighter than what is used for the festive season. The best part of the recipe is it doesn’t require the dough to be chilled prior to use.

San Choy Bau

San Choy Bau is amazing for a number of reasons. It’s pretty quick to make which is great on the occasions you’re time poor. It’s low-carb as uses lettuce leaves as a wrap for the meat mixture. And lastly because you can have a meal with added kick by including fresh chopped chilli without it impacting the kids.

Sugar Free Mini Muffins

Inspired by a recipe Tamara made, I decided to amend it to be suitable for kids lunchboxes. Not only is this recipe super healthy, it doesn’t contain any added sugar (apart from the optional dusting of icing sugar I did once baked), and if you use gluten-free oats, this recipe is then gluten-free. Perfect!

Blueberry Ricotta Pancakes

Light and fluffy, these pancakes are worth the little extra effort to prepare. Definitely make these when you have a special breakfast or brunch planned. Serve with fresh fruit and maple syrup.

Spinach & Ricotta Rotolo

Rotolo is a lesser known Italian pasta dish with this version being similar to the popular cannelloni. The filling is rolled up in pasta sheets, cut and placed into the pasta sauce then baked in the oven to get delicious crunchy bits.

Raw Choc Brownie Balls

Super easy to make, yet super healthy to eat. These little balls of delight are great if you’re after a guilt-free snack or just crave a little extra sweetness in your life. All you need to do is just blend all the ingredients together and then roll the mixture into balls. Easy as!

Strawberry Cake

It’s super easy – everything gets mixed together, no creaming butter and sugar, and used fresh strawberries. Layer the cake with a strawberry cream mix and this cake will be perfect when served at your next afternoon tea.
