Apple Crumble Pie

An apple a day.

Everyone loves a nice juicy apple. My two girls are no exception. They love to munch on an apple almost every day. This is in addition to all the other fruit they often have – bananas, grapes, blueberries and strawberries to name a few. But when you’ve got a few more apples than you can eat, this apple crumble pie recipe is perfect to make.

We’ve bought a few boxes of apples in the last couple of months from the Sydney Markets.  But at only $2 a box, there were more apples than we could eat before they all went bad. One of the only things we could do with all those apples was to turn it into stewed apples and freeze them.  It’s lucky we have two freezers in our house to accommodate all the produce we buy!

How to stew apples

It’s easy to stew apples. I’ve included instructions in the recipe notes below. But the key is to dice the apples into fairly uniform pieces. They don’t need to be exact but being roughly the same means they cook evenly. There is water added with the apples to help the stewing process. But this can dry out so add a little more water as needed.

Last night I decided to make a little treat for my family.  After thawing out the stewed apple I gave Daniel a choice on what I used it for – apple crumble, or apple pie.  Both equally as delicious as each other.  Typical guy his reply was “either is good”.  Well that didn’t help me at all with deciding which one to make.  There was only one answer in my mind… I’ll make both. Well, not two separate desserts.  I’ll combine the two together and make Apple Crumble Pie.

After I made it, I decided to google this and see if others have done the same,  Martha Stewart has her own version. However, I found mine was simpler than hers to make with a couple less ingredients. She adds raisins but since I’m not a fan of cooked raisins in food, my recipe doesn’t include this.

Apple Crumble Pie - a twist on two favourites.

Apple Crumble Pie

A warm and homely dessert that's definitely a favourite of ours during the winter months. This recipe is a spin on two recipes to get the best of both worlds.

Cook Time 30 minutes
Total Time 40 minutes
Servings 8 people

Ingredients
 

  • 1 sheet shortcrust pastry
  • 2 tablespoons breadcrumbs
  • 2.5 cups stewed apple
  • 75 g butter, melted
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/3 cup flour

Instructions
 

  • Heat oven to 175 degrees celsius.
  • If you have square pastry, take your sheet and roll out to make it more round. Place it into your pie dish and trim the edges all around.
  • Sprinkle the breadcrumbs onto the pastry.
  • Place your stewed apple on top of the breadcrumbs and spread it around evenly.
  • Mix all dry ingredients together with the melted butter then spread the crumb mixture on top of the apples.
  • Place pie into the centre of the oven and bake for 30 minutes until pastry is golden. Check after 15 minutes as you may have to put a sheet of tin foil on top to prevent the crumb from burning.
  • Serve warm with either cream or ice cream.

Notes

  • To stew apples yourself is easy! 
    • Peel and dice 5 apples into fairly uniform pieces.
    • Place a medium saucepan on low heat, and add 5 tablespoons water and diced apples.  Cook, stirring regularly, for 10 minutes or until the apples have softened. Add more water to the saucepan if needed.
    • Remove from heat and cool to use in this recipe.
  • This recipe doesn't have any cinnamon but you could mix about 1/2-1 teaspoons into the stewed apples before adding it into the pie dish.
  • The crumb is quite forgiving so if you want to add a little more or less of each dry ingredient you can but you just might need a little more or less butter. My proportions above are for a light covering of crumb on top of the pie.
